A little while back Abby and I had the idea to have cake competitions between ourselves. Not really to see who is better (she absolutely is) but to challenge each other and improve. This is something that I should definitely be doing more of in every aspect of life. I have always been a firm believer in, you can never know everything so don’t stop learning. Unfortunately it can be very easy sometimes to get stuck in a rut or mediocrity because it’s comfortable. I do it more than I should, they key is trying to get out of that rut before rock bottom. Recognizing these lulls and being able to address the situation is the main key, sometimes you just need that little self wake up call.
But enough of the self motivation talky talk. Let’s get into the cake battle. For the first annual, semiannual, monthly, I don’t know how often cake battle we took a family poll and decided the first cakes guidelines had to be a white cake with vanilla frosting. Doesn’t matter what the filling is, what type of frosting , just had to be those. Abby made a beautiful coconut cream cake with a coconut pastry cream and cream cheese french buttercream with toasted coconut.
I decided to go with a berry and citrus combo doing an Italian buttercream, blueberry mousse filling, and blood oranges. I reduced some of the blood orange juice and brushed it on the layers of cake before placing the mousse. I was pretty happy with the cake but had a couple missteps. I tasted my buttercream and it didn’t really taste like much which I was quite confused by until I saw the 1/3 cup of sugar sitting on the counter still that was supposed to be added to the egg whites… I ended up beating in some powdered sugar to sweeten it a bit but it wasn’t the same. Not bad, but could have been better. I also hate the blueberries I put on the bottom of the cake, should have piped frosting. ¯\_(ツ)_/¯
Overall the cakes were really good. Everyone seemed to like both of the cakes and the flavors. However I’m giving this win to Abby, even though I really liked my flavors her cake recipe was better and lighter, which was the main point of this challenge. Can’t win without getting the basics down. My frosting wasn’t sweet enough and the cake could have been lighter, and for those reasons we had to chop you. Always have to look at the flaws and improve upon them though! Not sure how often we will be doing these cake battles but I will be posting pictures and descriptions whenever we do. Hopefully by the end of the year we can look back on these cakes and see how much we have improved. Until then thank you as always for reading and checking out the page! Later gator.
