Do you have a party coming up that you need to bring a dish to? Do you have some friends that are vegan but would still like cookies? Do you have no friends or parties to go to but would still like some great tasting cookies? Then this recipe is for you! These cherry chocolate chunk cookies have no eggs no dairy but tons of flavor. I usually don’t like vegan, mainly because the lack of egg and butter can ruin the texture, but these have a great texture and taste. Abby made these for Ataula’s 5 Year party and they were all gone by the end of the day. If you are vegan or just like some really tasty cooking do yourself a favor and check these out!
Whole Wheat Cherry Chocolate Chunk Cookies: Yields: 3 Doz
- 250 g Whole Wheat Flour
- 10 g Baking Powder
- 1 1/2 tsp Baking Soda
- 1 tsp Salt
- 200 g Sugar
- 220 g Brown Sugar
- 246 g Canola Oil
- 142 g Water
- 300 g Callebaut Chocolate Chunks, rough chopped
- 150 g Dried Cherries, rough chopped
Sift together dry ingredients. Whisk together sugar, brown sugar, water and canola oil. Fold wet mixture and dry ingredients until hydrated. Fold in chocolate chunks and chopped cherries. Cover and chill in a bowl for 24 hours.
Scoop into 1 tablespoon size balls. I use a purple portion scoop.
Bake at 325º for 8 minutes. Rotate and bake another 2-3 minutes until the center is just set.
Instead of whole wheat you can use all AP flour (500 g)
If you want a little bit of a different flavor you can use 250 g AP flour and 250 g Light Rye flour.
This recipe can also be used for a straight chocolate chip cookie recipe by simply taking out the 150 g dried cherries and adding 150 g more chocolate chunks.
Any variation you choose will be vegan! For all the people who have that friend who is vegan and can’t have the snacks brought to parties here is an absolutely delicious recipe that is so simple to make.
