Honey Lemon Vinaigrette

Hello everyone, now that it’s starting to get warmer out I wanted to do an easy recipe for some summer time salad. Abby and I went to the Hillsdale farmers market and got some really beautiful greens to use. I’ve had this recipe for a couple years ago but made some tweaks to it, it’s quick, simple, and perfect for a side salad or throw some grilled chicken on it and make it a meal!

Honey Lemon Vinaigrette:                                             Yields : 1 Pt

  • 1/2 C Red Wine Vinegar
  • 2 Tbsp Dijon
  • 2 Tbsp Honey
  • 2 Cloves Garlic ( Minced)
  • 1/2 Shallot (Minced)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 C Lemon Juice (Fresh)
  • 2 C Blended Oil

In a bowl whisk together all ingredients (minus the oil). When everything is combined slowly add the oil while continuing to whisk. You want to slowly add the oil so it emulsifies and does not break. Continue to add oil and whisk until all the oil is incorporated. Finally salt and pepper to taste. And its as easy as that! Store it in the fridge and shake before using if it slightly separates.
