Its so hard for me to turn down anything chocolate and peanut butter. Except for the Easter egg Reese’s Cup, the ratios are off and it tastes weird, but I digress. So I am pretty sure I have the most incredible girlfriend ever, she works over 80 hours a week and still makes pastries for my family, she amazes me more and more everyday. These recipes over the coming week will be some of the treats she made, starting off today with chocolate and peanut butter chip cookies, can’t go wrong!
Chocolate and Peanut Butter Chip Cookies:
- 12 oz Butter
- 1 lb Brown Sugar
- 1/2 tsp Salt
- 2 Eggs
- 2 tsp Vanilla
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 lb AP Flour
- 8 oz Chocolate Chips
- 8 oz Peanut Butter Chips
Using a paddle attachment, cream butter, sugar, and salt. Slowly add egg and vanilla. Sift together baking soda, baking powder, and flour. Add to butter mix on low speed. Mix in the chips. Scoop 2 tbsp portions onto sheet tray and let chill in fridge for 2-3 hours. On a tray lined with parchment bake at 325º for 10-13 minutes. Simple and delicious!
